How much nutmeg powder for a béchamel?
For a béchamel (500 ml of milk), ¼ teaspoon (1 g) is plenty. Since our powder is fresh and concentrated, dose gradually.

Are there any precautions to take?
Nutmeg contains myristicin, a psychoactive compound at very high doses. Normal culinary use (a few pinches per dish) is perfectly safe. Avoid doses above 5 g per serving.
